Chocolate Crinkle-top Cookies
(Note: These are not the cookies we like to mail to people. I can't find the recipe for that...)
1 package chocolate chips (divided)
1 1/2 cup flour
6 Tbsp butter/shortening, softened
1 1/2 tsp. baking powder
1 1/2 tsp. vanilla
1/4 tsp. salt
2 eggs
1 cup sugar
1/2 cup powdered sugar
Microwave 1 cup chocolate chips on high for 1 minute, stir. Microwave at 10-20 second intervals, stirring until smooth. Cool to room temperature.
Combine flour, baking powder, and salt in small bowl.
Beat sugar, butter/shortening, and vanilla in large bowl. Beat in melted chocolate. Add eggs one at a time, beating well after each. Gradually beat in flour mixture. Stir in remaining chocolate chips. Cover, chill just until firm. Shape dough into 1 1/2 inch balls, roll in powdered sugar. Place on ungreased baking sheets.
Bake in preheated 350F oven for 10-15 minutes or until sides are set but centers are still slightly soft.
I... should have more, but the big recipe box is at Mom's place and I keep forgetting to transcribe while I'm there. >.> There's also the standard cookie press recipe, but unless you have a cookie press (and most people look at me wonky when I show off mine) it wouldn't do you any good. ^^; One of these days I should make cookie press cookies and mail them out. They're so cute and bite size!

Date: 2007-12-22 09:45 pm (UTC)Okay, kitchen essentials: rice cooker, electric skillet, wok, crock pot, kitchen scissors. For real cooking. *grins*
But, hey, somebody's gotta do the baking. That can be your job. When we have LJ House an all live together with our laptops. ^_^

Date: 2007-12-22 09:58 pm (UTC)Hmm.. >.> Rice cooker, check. It's all in Japanese though and I haven't finished translating the menus so it rarely gets used. ^^ ... electric skillet? >.> What's wrong with the normal ones? The normal ones can double as burglar-repellent. ^___^ wok, uh, nope. >.> Mikey doesn't eat veggies and I'm not allowed near the stove. ^^; Crock pot... ;_; waaannntt.... scissors, heh, sort of. We use my largest pair of craft scissors as kitchen scissors. ^^;
Ooh, that would be fun. *.* I would be the High Kitty In Charge Of Sweets! ^_____^ Hee. <3

Date: 2007-12-22 10:14 pm (UTC)I mostly use my rice cooker for rice, sometimes to steam veggies. A little boullion, or use broth instead of water, and you have flavored rice! Electric skillet can double as a griddle, and frees up room on the stove. I have real skillets, too. ^_^
Craft scissors... so, when you cut the chicken or whatever up, does it have scalloped edges and stuff? ^^
Yay! High Kitty of the LJ House!

Date: 2007-12-22 10:20 pm (UTC)Griddle, huh? >.> I guess if we cooked more this would ring bells, but I tend to eat out of a can and Mikey's sort of the fast-and-binge type. x.x Sigh. That boy...
*lol* No, no. But I got this set of three scissors once and I wasn't using the largest pair for anything and we needed kitchen scissors, so...

Date: 2007-12-22 11:30 pm (UTC)I already have everything to make snowballs! :D
I didn't know cookie presses existed until 3 minutes ago. It looks so awesome though!! I thought the only way was using cookie cutter. ^^;;; I tend to make my cookies by dumping 1 teaspoon of dough on a cookie pan. XD;;;

Date: 2007-12-22 11:43 pm (UTC)Cookie presses are awesome fun. But you have to make sure you get a good one. The ones that have turn-cranks (like screws) are not good. The ones that look like guns aren't good either. The best ones look like this (http://www.nandyala.org/mahanandi/images/kitchengargets/janthikalamaker1.jpg). (The one on the right)
I have LOTS of cookie cutters, and the dumping method works good too. :) But the cookie press is just so much FUN. ^____^
