Recipes

Recipes for [livejournal.com profile] fechan. :) More Christmas cookies. ^.^

Snowballs

1 cup powdered sugar
1/2 tsp. soda
1 cup butter
1 tsp. vanilla
1 egg
2 cups flour

Cream butter & sugar. Add egg & beat well. Dissolve soda in a little (2 tsp) hot water and add to mixture. Add vanilla and flour.

Drop by teaspoon onto greased pan. Bake in very slow oven, 250F until they just start to color, about 20 minutes. Cool slightly and roll in powdered sugar.

Pinwheels

1/2 cup butter, softened
1/2 cup sugar
2 tsp. vanilla
1 Tbsp. water
1 egg
1 1/2 cup flour, sifted
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 Tbsp milk
1 oz. baking chocolate, melted
2 Tbsp. cocoa powder

Thoroughly cream shortening/butter, sugar, and vanilla. Blend in egg. Sift together flour, baking powder, and salt. Stir into creamed mixture.
Divide dough in half; to one part add chocolate, cocoa, and 1 Tablespoon milk. Mix. Chill both doughs 1 1/2 hours.

On waxed paper, roll each half of dough into 10x2 inch rectangles. Brush chocolate layer with hot milk, place plain layer atop so its far edge extends beyond chocolate edge. Roll as for jelly roll.
Wrap in waxed paper, chill thoroughly.

Slice thin. Bake on greased cookie sheet in moderate oven 375F/190C for 8 to 10 minutes.

Peanut Butter Kisses

1 cup sugar
1 cup brown sugar
1 cup butter/shortening
1 cup peanut butter
2 eggs
1/4 cup milk
2 tsp. vanilla
3 1/2 cups sifted flour
2 tsp. baking soda
1 tsp. salt
1 package Hershey Kisses (or other large kiss style chocolates)

Cream together sugar, brown sugar, shortening/butter and peanut butter. Add eggs, milk, and vanilla. Beat well.
Sift together flour, baking soda, and stalk. Add to wet mixture. Beat well.
Shape into 1 inch balls, roll in additional sugar. Place on ungreased cookie sheet.
Bake in 375F oven for 8 minutes. Remove from oven. Press one Chocolate Kiss into center of each warm cookie. Return to oven. Bake 3 minutes longer.

Chocolate Crinkle-top Cookies

(Note: These are not the cookies we like to mail to people. I can't find the recipe for that...)

1 package chocolate chips (divided)
1 1/2 cup flour
6 Tbsp butter/shortening, softened
1 1/2 tsp. baking powder
1 1/2 tsp. vanilla
1/4 tsp. salt
2 eggs
1 cup sugar
1/2 cup powdered sugar

Microwave 1 cup chocolate chips on high for 1 minute, stir. Microwave at 10-20 second intervals, stirring until smooth. Cool to room temperature.
Combine flour, baking powder, and salt in small bowl.
Beat sugar, butter/shortening, and vanilla in large bowl. Beat in melted chocolate. Add eggs one at a time, beating well after each. Gradually beat in flour mixture. Stir in remaining chocolate chips. Cover, chill just until firm. Shape dough into 1 1/2 inch balls, roll in powdered sugar. Place on ungreased baking sheets.
Bake in preheated 350F oven for 10-15 minutes or until sides are set but centers are still slightly soft.

I... should have more, but the big recipe box is at Mom's place and I keep forgetting to transcribe while I'm there. >.> There's also the standard cookie press recipe, but unless you have a cookie press (and most people look at me wonky when I show off mine) it wouldn't do you any good. ^^; One of these days I should make cookie press cookies and mail them out. They're so cute and bite size!

Wheee! new cookie recipes.

Made the pinwheels; they're fun. 'cept I had trouble putting them together. It worked out in the end though. Do you have any tips?

Erm. It's been... well... before I left Idaho since I made pinwheels. ^^; I think I vaguely remember Mom rolling-pinning them together a bit? Hmm... Should give them a shot again and see how it goes.
